Equipment

  • Nonreactive container, 1-2 quarts

Materials

  • 2 each kidneys
  • 2 quarts milk
  • 4 cloves garlic crushed
  • 8 stems thyme fresh
  • 4 each bay leaves fresh if possible
  • 1 quart brine or spice brine 1 cup:1 gallon ratio

Instructions

  • Lay kidneys on side and butterfly, exposing interior fat plugs. Using knife tip, carefully remove.
  • Place trimmed kidneys in container with 1 quart milk (or to cover), 2 cloves garlic, 4 stems thyme and 2 bay leaves. Soak overnight.
  • The next day change out the milk soak, using the last half of the milk, garlic, thyme, and bay leaves. Soak overnight.
  • Discard 2nd milk soak and cover kidneys with brine for up to 24 hours.
  • Remove from brine and prepare according to recipe.
