Basic Kidney Preparation
Equipment
- Nonreactive container, 1-2 quarts
Materials
- 2 each kidneys
- 2 quarts milk
- 4 cloves garlic crushed
- 8 stems thyme fresh
- 4 each bay leaves fresh if possible
- 1 quart brine or spice brine 1 cup:1 gallon ratio
Instructions
- Lay kidneys on side and butterfly, exposing interior fat plugs. Using knife tip, carefully remove.
- Place trimmed kidneys in container with 1 quart milk (or to cover), 2 cloves garlic, 4 stems thyme and 2 bay leaves. Soak overnight.
- The next day change out the milk soak, using the last half of the milk, garlic, thyme, and bay leaves. Soak overnight.
- Discard 2nd milk soak and cover kidneys with brine for up to 24 hours.
- Remove from brine and prepare according to recipe.
