1 cup:1 gallon ratio
Instructions
Lay kidneys on side and butterfly, exposing interior fat plugs. Using knife tip, carefully remove.
Place trimmed kidneys in container with 1 quart milk (or to cover), 2 cloves garlic, 4 stems thyme and 2 bay leaves. Soak overnight.
The next day change out the milk soak, using the last half of the milk, garlic, thyme, and bay leaves. Soak overnight.
Discard 2nd milk soak and cover kidneys with brine for up to 24 hours.
Remove from brine and prepare according to recipe.
